Pumpkin Bread ~ Even the Knomes who come at nite can’t stop me

I defrosted some pumpkin I had in the freezer from Halloween 2007 today to make some pumpkin bread. Hmmmm it still is good too, I wasn’t sure how it would be after defrosting.

Here is the recipe I made, my family just gobbles it up

Ingredients:
1 cup pumpkin
1/4 cup maple syrup
1 egg
2 Tbs vegetable oil
1 1/2 tsp vanilla extract

1 1/2 cups flour
1/2 cup brown sugar
1/3 cup raisins
1 tsp baking powder
1 tsp baking soda
1/4 tsp ground cinnamon
1/2 tsp salt
1/4 tsp ground cloves
1/2 tsp allspice

In a mixing bowl combine all of the dry ingredients. Add other ingredients and blend. Pour into greased and floured loaf pan, and bake for 50 minutes at 350 degrees.

    That is different than my pumpkin bread recipe. I found a banana bread recipe and use it for all my speciality breads just changing the “fruit”. I’ve made banana, pumpkin, zucchini and apple bread with it in the past. Not made any in a long time.
