Ropa Vieja

I can’t believe September is here and that we are on it’s 4th day now. I shake my head in disbelief. So many new and exciting things going on for me, that I want to make sure I remember then clearly. So I am going to create a few new pages for a variety of reminders to myself and maybe inspire someone too.

I didn’t get any mail out yesterday, but I did prepare a couple to send out on Tuesday. I plan on preparing one or two more tomorrow Sept 5, Labor Day.

For dinner tonight I made Ropa Vieja a dish my grandmother prepared often and it translates into Old Clothes lol. Growing up adults always told me it was horse meat. You won’t believe how long I believed that to be true, until I figured out it was flank steak. I cooked it in the crock pot which was a first, but the results were very good and tasty.

My grandma used to make this often for us. My mom didn’t make it so often as she didn’t like to cook much, she only cooks when she needs to. Lately all she cooks is healthy for you, like egg whites, seaweed and other things that she blabs about constantly but can’t remember now. (sorry mom I do love you)

Stringed Beef (Ropa Vieja)

String the beef. Slice onions and green pepper. Crush garlic and fy in hot oil with onion. Add green pepper and fry a little more. Add remaining ingredients, cover and cook over low heat for 15 minutes, stirring occasionally to avoid sticking. The red pepper may be added now or used to decorate. Serve with rice or salad.

Serves 8 but in our home it serves 4 with a little left over 🙂

Yummy Recipe Wednesday – Stringed Beef Ropa Vieja
