What’s for Dinner? Updated

The day has just gone by too fast for me this morning.  I am at a loss for what to cook tonight, going to do some pantry and fridge searching to see what I have to put together.

Any ideas are most welcomed.

We finally decided on breakfast for dinner.  Scrambled eggs, waffles and milk

Homeschool Library Trip (updated)

Library trip went great, I can do this again.  The kids had a great time and very well behaved.

Okay I have not been to one of these since I started babysitting a little 5 month old.  I am praying it will go well, my in-laws are coming along to give a hand or two if I need it.

The kids are having hobby day and sharing their toys with other kids and snacks.

I will see later this afternoon if this was a good idea or not for us today.

Our Family Conversation During Dinner

Last night  we had a very interesting topic, it was about our meal planning.  I am not sure how it got started but we decided as a family to have.

Taco Night – Friday

Stir Fry Night

Left Over Night

Salad Night

Cuban Night –

New Recipe Night

Breakfast Night

The only night that has been decided is Taco Night, which we have been doing since before Thanksgiving.  It is working great, we all love it and know wheat to expect that night for dinner.

The rest of the ideas will have to be worked in over time.  I think this was a great conversation and I do hope we have more like these.

Taco Soup For Dinner Yum

Tonight we are having Taco Soup for dinner.  We seem to be having quite a few Mexican dishes on our menu lately, we love our spicy and season.

Taco Soup

1 lb ground beef, 1 onion chopped, 1 1/2 c water, 15 1/4 oz can corn, 3 (15 1/2 cans Mexican Chili Beans, 15 oz can tomato sauce, 14 1/2 can diced tomatoes, 4 1/2 can chopped green chilles, 1 tbsp taco seasoning

Garnish: shredded lettuce, chopped tomatoe, shredded cheddar cheese, sour cream

serves 6 – 8

Place ground beef and onion in a pot over medium heat.  Cook until beef is browned and onion is tender.  Stir. Drain and stir in remaining ingredients except garnish, bring to a boil.

Reduce heat and simmer, uncovered for 15 minutes, stirring occasionally.  Spoon into bowls, top with desired toppings.
