Yummi Recipe Cheesy Baked Potato

I wanted to make Cheesy Baked Potato, but didn’t have any hamburger in the house.  My little brain got to cranking and I remembered a few chicken legs I had baked the night before, so I thought hmm.  I took the chicken and took it off the bone and added it to the Cheesy Baked Potato.  I took pictures of the chicken but they didn’t look very tasty so I decided to axe them from the post.

I did get plenty of other pics that came on very delish.

I did have three boxes but opted to make only 2 and I am glad I did because it made plenty with enough for leftovers for lunch the next day.

Here is our tasty meal ready to serve to my little family.

With a tasty side salad of spinash and spring mix and it is all ready to dive in.

Yummi Recipe Strambolies Or Some Sort of Something

Well this was fun to make, we really were just going by instinct.  My husband saw this on the television and wanted to try it.  See what you think, they were actually quite tasty.

Finally found the rolling pin hiding in the drawer, after taking out every pan we own from the cabinet.

Yea then I had to put them away darn

We roasted chicken, which we used a timer for really we did.  The timer went off and I turned it off, but

forgot to turn the oven off duh.  Oh well crispy chicken we got out of it.

Feta cheese we love this cheese, can’t make almost anything without it.  Hmmm where is my darn

spinach pic, I know we also put that into this meal.

This is what it looked like after we rolled it, turned out to be a fat one.

My husband was in such a hurry to each eat (was in such a hurry I put my finger in the wrong key) dinner I didn’t get a picture of it after baking.  That lil poop, I was a bit annoyed at him for being too quick for once.  Usually not a problem with him as he does almost everything slow.

Oh well they were very good we all loved them and requested he make them again whenever he feels the urge.

Saturday Stumbles Fridge Foods and More

I slipped and fell this last Tuesday, so I have had lots of time on the internet to find some pretty neat stumbles.  So here I go what I stumbled this week.

1.  My Fridge Food My husband liked this one since it might save us a bit on our food budget.  Guess we will see if it helps us do just that.

2.  Peanut Butter S’mores Turnovers I think this are delish, I have to try these with my kids.  My little one is allergic to peanuts so I will try them with soy butter, which should work same.

3.  Cupcakes A-Z – Food seems to be following me this week, and these cupcakes are to die for.  I probably couldn’t make most of them but now I have a terrible craving for them. haha

I will stop now because it’s lunch time and now I am starving.

Yummy Recipe Tuesday – Chicken Fricasse

This is one of my favorite recipes to make for my family.  I love chicken too, my husband says we are going to turn into chicken.  When we do eat chicken it’s most likely inspired by hubby.  Between the two of us we eat almost all our meals at home, every once in while we eat out but not very often since paying off our debt.

Chicken Fricasse

What you need:  2 2lb chickens, 3 cloves garlic, 1 sour orange, 1 green pepper,  1 large onion, 1 can tomato sauce, 1/3 cup oil, 1/2 cup capers (I leave these out most of the times), 2 tsp salt, 1/4 tsp pepper, 1 cup dry wine, 1 lb potatoes,

What to do:

Cut chicken into quarters, and cover with crushed garlic, sour orange juice and onion and green pepper rings.  Brown chicken quarters in hot oil, add the onion, green pepper and orange and then the tomato sauce, capers, wine, water, salt and pepper.  When this is half cooked, add the potatoes and finish cooking.  Just before serving, petit pois may be added if desired.   Serves 8

Serve this over white or brown rice  We make brown rice  98% of the time now, I still revert back to the white rice my mom and grandma used to make when I was growing up.

We make this and save the leftover for lunch the next day for my husband at work and for me and the kids at home.
